CAN FOOD MAKE YOU HAPPY? By Kelly Granite Enck
I spotted a lecture on the Juice Café’s Bulletin board that read, come hear Victoria Boutenko talk about her new book 'Green for Life.' I copied the phone number down and jumped in the car where David was waiting for me to hand him a Juice. I found myself exploding with excitement over this lecture! I must have intuitively known there is more to food, than my past relationships with it!
“David! Will you go with me to this lecture on eating leaves?”
“What lecture? Eating what?”
“I just saw a poster for a lecture on food, green leaves specifically.
Do you think that there might be such a thing as HAPPY FOOD?”
I can’t stop falling more and more in love with David, as you should have seen his face!
After recovering from his initial confusion, he was already there with me in the lecture, full of the same enthusiasm!
I booked our reservation for Thursday night and all week the build up to the idea of happy food was all I could think about!
We arrived early! It was a potluck of fresh food. I had a basket of apples with us from the local super market, but upon observing that all the food was organic, I wondered if my apples were poisonous, so I excused myself and took my basket of apples to the bathroom and secretly threw them in the trashcan. As I looked at the apples in the trashcan it occurred to me that the insect spray has been on all the fruit I have been eating my entire life. Even worse I’ve been feeding poison apples to my kids!
David waited for me just outside the ladies restroom. I came out with an empty basket.
“Kelly, where are the apples you just bought for the potluck?”
I threw them away!
“I think I brought poison apples to the potluck?”
I stood staring at him. I felt I was having a revelation and there was no turning back.
David laughed and said, "Couldn’t you have just rinsed them off?"
I looked at him puzzled. "I don’t know?"
We walked up the ticket girl to get into the lecture and I hid my empty basket under my coat as not to have to explain what I did.
David and I walked into the lecture hall, which was an old church. We were greeted by 70 of the liveliest characters we’d ever seen! I glanced over at the potluck table. It was filled with magnificent colored dishes. It appeared to me that a great amount of time had gone into every dish, by the elegant garnishes of orange slices, beautifully arranged yellow and red heirloom tomatoes on bright green leaves. Salad bowls where over flowing with farm fresh vegetables and sitting next to them was homemade dressings with spoons to help your self to. My eyes smiled at the dishes that were radiating goodness on the long table. Just when I felt ready to fill my plate up with exotic leaves, I spotted a tray of raw desserts! I smelled the spices from the raw pumpkin pie? How can this be raw? I was amazed with this new experience I was observing with food! My eyes locked next on an array of Fudge Desserts!
“Are these raw?” I asked?
“Yes!” Everything on the table is raw!”
“What is in the Fudge?” I asked, as if I were visiting another planet!
“It’s made with Cacao nuts from Brazil and sweetened with agave nectar, not only is it the best fudge you'll ever taste in the world, but it good for you. The fudge is a detoxifier, pulling toxins out of your body!"
I tasted it right there in line, standing over the buffet! It was Fudge made from heaven!
As I walked further down the amusement park of dishes David and I were greeted by an older man who looked to be in his eighties with clear white around his beautiful blue eyes.
He offered us a taste of his raw pumpkin pie.
“How did you make this?” I asked him.
“It’s made entirely fresh, no dairy, no sugar; it's made with organic raw pumpkin and nectar to sweeten it.”
He put some on our plates and said,” taste it!”
It was the best thing I had ever put in my mouth!
"I can’t believe this is good for you?"
"How do I get into this raw foodstuff?" I asked.
“Well here is a book that will explain everything!” He handed me 'The Live Food Factor' by Susan Schenck
He said, "I bought a box of these books so I could give them to my friends, because raw food saved my life!”
“Yes, ten years ago I was told I had two weeks to live. I had 11 tumors on my lungs.
I was not ready to go yet, so I prayed, and right after my prayer I heard a story on the radio about how raw food cures, cancer, aides, hepatitis, diabetes and asthma.
I became raw in that moment and within three months every one of my tumors were gone.
I have never felt better in my life! I have so much energy I can do a handstand for you right here!”
“OK, please do one!”
Right in the middle of the most amazing experience of my life…this beautiful old man with silver hair stood on his hands in a perfect handstand!
A tear ran down my check with no help from me.
I found the fountain of youth Raw Food!
I wrote him a check to buy the book from him and asked for his number to stay in touch.
David and I loaded up our plates with exotic “LIVE” dishes!
We sat down comparing the tastes of the live foods that we had covered in wild sauces that were now tantalizing our palettes!
Suddenly a dainty bell rang to introduce Victoria the author of ‘Green For Life’ to the stage. She walked center stage, standing certain about the message she had to pass on to us. In her hand she held the largest green leaf I had ever seen!
Victoria spoke about the industrial revolution, the FDA and the Standard American Diet.
What I concluded was that when Corn Syrup was invented to help sell food products they put it in everything and when white flour came it was easy to store and became a main food source. Basically we as an American culture cut out fresh foods and filled our pantries with canned foods and processed meals. Even our milk may not be safe if it comes from cows that are filled with hormones. I also learned that when you cook meat the blood becomes carcinogenic. Victoria shared that her family was sick when she introduced raw food to them and one by one they got well. Her greatest goal in life is to reintroduce fresh live GREEN LEAVES back into the American Diet. Her study took her to observe Chimpanzees. Chimpanzees share an estimated 99.4% of genes with humans, but their diet is dramatically different from ours. The most glaring difference is that chimpanzees consume significantly more green leaves than humans. She concluded that the optimal diet for a human would consist of consuming one pound of leaves a day. This is a lot of leaves so she invented a Green Smoothie to drink the leaves.
She said, “ Drinking a green smoothie every day will change your life! Your pooh will float from being so healthy and never stick to the toilet again, and your sweat will not smell!”
I laughed with excitement when Victoria said,” Your grey hair will revert back to its youthful color and the lines on your face will begin to disappear!”
She said, "I wake up every morning with more and more energy from the pound of leaves I am getting into my body daily. Basically a percent of your aging reverses!"
She said to vary the green leaves from day to day as they carry a tiny amount of phenols that are good for you in small doses. Since different leaves contain different phenols varying them provides optimal health benefits and avoids building up one type, which is not good for you. She said, “Kale has the 9 basic amino acids needed to build any protein, more that steak and you can get your proteins from the leaves.” I wrote down three types of leaves to start with Kale, Spinach, and Chard. Suddenly trays of green smoothies were going around the room to try.
I asked, “what’s in it?”
She said, “Kale, Pineapple, bananas, and apples.”
David looked at me and said, “It’s delicious!!”
So with her book “Green for Life” and “The Live Food Factor” in my hand David and I left the lecture to try a Green Smoothie detox daily for one month.
On the fourth day, David said, “My Asthma is gone!”
David had been taking medication from an inhaler his whole life.
“Oh, My God this works! I replied with a huge question mark on my face?
“I can’t believe it. Why doesn’t the whole world know about this?”
David looked back at me also puzzled especially because David has completed all but his dissertation for a Ph.D. in Statistics and this was not a scientific study, but it was a very unusual correlation, strong enough that he made the leap.
He said, “I can do this Kelly, go all raw!”
“You’re kidding me?”
Then David said, "No I am not kidding, I can do it!”
“What give up steaks and pizza and your 6 diet cokes a day?”
David answered, “YES!”
That night we threw away our pans, microwave and all the processed food in our kitchen cabinets!
In one week we had lost the few extra pounds we were carrying around with us and I noticed that my face did not need lotion any more. I also started to notice all the toxic chemicals in our apartment. I threw away the bleach, our soap, and the toxic toothpaste. We started using organic home products as we began to feel our minds clear.
We had no idea what we were doing as far as how to eat a raw diet, so we got on YouTube and played videos from other raw foodists and found another raw food book, Sarma and Matthew's titled, “Raw Food Real World”. David and I used our own natural instincts on how to eat raw. We purchased Organic celery and raw peanut butter, raw dried mangos, raw trail mix and I made beautiful salads and stocked up our refrigerator daily with Green Smoothies! It had a higher cost buying all live, fresh and organic, but with the health issues gone, it was worth it, not to mention the extra years we would gain in living a healthy life!
I was shocked to find out even our drinking bottles were leaking toxins into our water and we threw all of those out and started buying water in glass bottles.
I was also excited about restoring the moisture that is lost due to age from behind the eye to the point of not needing glasses for reading any more! I wondered why the whole world does not know that the answer to all our illnesses is being grown on organic farms! Somewhere I missed that food could become loving to my 35 Trillion Cells. The leaves themselves have chlorophyll in them, which behave like red blood cells and help to carry oxygen to cells all over my body … they are filled with liquid sunshine. I felt suddenly like I was holding a secret and the whole world needed to know. But when David and I started sharing the news about raw food we were shot down. The first concern was how would we get our protein?
We were excited to share, "Just look at how big chimps are! Their diet is nearly all leaves and fruit."
Nothing worked, so we just kept making smoothies for everyone we loved and seduced them into our world with the best tasting drink they have ever had. Green Leaves, Pineapples, Mango, and Bananas!
David and I were so happy with our new life style that when he was assigned to a job in Scotland for two weeks we decided to take our blender in a suitcase and make green smoothies in the hotel room!
We used a plug converter and cut the pineapple and mangos and threw them in with our leaves and flipped on the blender! Smoke filled our room as we caught the carpet on fire. We thought it was just the motor trying to mix up the greens, as our blender was not the one they recommended. Ours did not have much horsepower. We hurried to unplug it and open the windows. Meanwhile David was busy scrubbing the black soot off the carpet. To my surprise he got it all off!
That finished the smoothies in Scotland. Instead we found a supermarket to buy some local greens and turned the week into nuts and salads! It was a little strange finding our way around being All Raw, but the impact of fuel that the raw food gave to our energy level made our strange moments well worth it.
David being a teacher of Six Sigma Business Improvement processes had to come up with a solution for drinking Green Smoothies while we traveled. So he went to REI and purchased a large BPA free water container, and I made three days of Green Smoothies. Now we pack the plastic water holder in a hard suitcase and enjoy feeling great on short trips away from our blender. I invite you to read my memoir "From Hollywood to God."
